Why Is My Prosecco Cloudy?
At Billy Button Wines, we make a number of different Prosecco styles — including both cloudy and clear sparkling wines.
Ready to drink your cloudy Prosecco?
Before opening, stand the bottle upright in the fridge for a couple of days. This allows the sediment to settle naturally at the bottom of the bottle and ensures the wine is nicely chilled, which also helps when releasing the crown seal.
Our Cloudy Styles –
Ancestrale & Col Fondo
Our Ancestrale and Col Fondo Proseccos may appear cloudy in the glass because the natural yeast remains in the bottle.
These wines follow the original, traditional method of sparkling wine production — before modern filtration and clarification techniques existed.
The wine is fermented in tank as normal, then bottled just before fermentation is complete. The ferment continues naturally in bottle, creating the carbon dioxide and fizz.
What’s the difference?
- Ancestrale — bottled with all yeast remaining, creating a more textural and cloudy style.
- Col Fondo — lightly clarified before bottling, making it a little cleaner and more approachable, sitting somewhere between Ancestrale and Traditional Method styles.
These styles are intentionally rustic, savoury and full of character.
Our Clear Styles –
Zero Dosage & The Socialite
Our traditional method Prosecco’s are made using the same process used in Champagne.
The wines are first clarified, then bottled for their secondary fermentation. Once complete, the bottles undergo a process called riddling, where they are slowly rotated over time until upside down, allowing the yeast sediment to collect in the neck of the bottle.
The neck is then frozen and the bottle disgorged — meaning the frozen plug of sediment is naturally expelled by pressure, leaving behind beautifully clear sparkling wine.
What’s the difference?
- Zero Dosage — no additional sugar added after disgorging, resulting in a very dry style.
- The Socialite — finished with a small amount of sugar after disgorging for a softer, more approachable style.

What are these crystals in the bottom of my glass?
Sediment or crystals you may occasionally see in some of our wines are naturally occurring tartrate crystals. These are completely harmless and are part of a natural winemaking process that can develop over time in bottle.
Interestingly, every wine can produce different shapes and formations of tartrate crystals. We find them fascinating, and because we do not cold stabilise our wines, we continue to observe how and when they occur across different vintages and varietals.
Each vintage has its own unique chemical composition and natural stability. Some years, tartrate crystals may form early in the wine’s life, while in other vintages they may not appear until the wine has been cellared for 10–15 years. Preventing this entirely requires significantly more processing and intervention — techniques more commonly used in large-scale commercial production than in small boutique wineries like ours.
The hot, dry conditions of the 2019 vintage appeared to increase tartrate precipitation in some wines, and we are also seeing this naturally occur in a handful of our 2024 wines. Crystal formation can be influenced by many factors including calcium levels, grape varietal, temperature, alcohol content, and naturally occurring compounds within the wine such as acids, proteins and polyphenols.
Calcium tartrate crystals in particular cannot simply be “stabilised out” — it is a natural chemical occurrence. Ongoing research continues into better understanding and predicting calcium stability in wine, especially as these deposits are becoming increasingly common with changing climate conditions.
For wines that may contain natural sediment or crystals, we recommend decanting before serving. Not only will this help separate any sediment from the wine, but it will also allow the aromas and flavours to open beautifully before drinking.
