2025 Billy Button ‘The Demure’ Pinot Blanc

Restrained citrus and pear notes with a fine, elegant palate.
2025 Billy Button ‘The Demure’ Pinot Blanc

Pinot Blanc originates from the Alsace region of France and is also extensively grown in North-Eastern Italy where it is known as Pinot Bianco. It is a colour mutation of Pinot Gris first reported in Burgundy in the late 1890’s. Pinot Blanc is exceedingly rare in Australia and only one small parcel is grown in the Alpine Valleys at the Mulcahy Vineyard at the foot of Mount Buffalo in Porepunkah.

Vintage Snapshot

The 2025 vintage truly told the tale of two seasons. Harvested towards the end of February, this fruit was picked ahead of the intense heat the region experienced later in the season. The fruit benefited from an ideal ripening window marked by clear days and cool nights.

Production Notes

Once pressed, settled and racked, the fermentation was undertaken with a selected strain of complexing yeast that respects the inherent fruit profile of the grapes. The wine was matured in tank with its yeast lees until clarification just prior to bottling in September 2025.

Tasting Note

Delicately perfumed aromas of exotic flowers, with fragrant notes of honeysuckle and gardenia, that lead into a vibrant palate bursting with ripe stone fruit. Yellow nectarine and fresh lemon take center stage, creating a bright and expressive flavour profile. Crisp, drying acidity and fine phenolics team together for a lingering, elegant finish.

Optinal Drinking Window - now to 2036

Our recent museum tasting has shown that this variety also has a great ability to age, with our first vintage of this wine from 2015 still looking good.
