2025 Billy Button ‘The Honest’ Fiano
Fiano originates from Campania in Italy and flourishes in the warm dry climates of Australia due to its high natural acidity, but when grown in the cooler Alpine Valleys climate it produces a medium to full bodied style of wine that is still refreshingly crisp.

Vintage Snapshot
The 2025 vintage truly told the tale of two seasons. Harvested in mid-February, this fruit was picked ahead of the intense heat the region experienced later in the season. The fruit benefited from an ideal ripening window marked by clear days and cool nights. The result is a wine that showcases pristine varietal character and beautifully developed flavours with lifted floral notes and a lively, refreshing palate.
Production Notes
Harvested at the end of February, the fruit was pressed as one batch into stainless steel. Cooled right down and settled overnight. Racked off heavy juice solids and divided into three batches split between a combination of flex cubes and stainless steel - each batch was then inoculated with a selected yeast. Sulphured immediately on completion of ferment to retain freshness and then left to mature on full yeast lees for five months before clarification. Bottled September 2025.
Tasting Notes
Pale straw with vibrant green hues. The nose is bursting with aromas of Granny Smith apple and lifted apple sherbet, delicately interwoven with fresh basil—beautifully fragrant and inviting. On the palate, the crunchy green apple character carries through, supported by taut, fine acidity. A subtle richness from toasted pine nuts adds texture and depth, leading to a savoury, lingering finish.

GOLD medal winner at the 2025 North East Victorian Wine Challenge
"As the fiano grape takes a serious foothold in our wine-drinking hearts, it is clear that there are many sides to the grape. Billy Button falls on the brisk, zesty, vibrant side of the ledger. Known for maintaining high levels of acidity, that is certainly a feature here, with a tangy acid pulse that doesn't stop as it brings lemon zest, grapefruit pulp and citrus flavours together with green apple, bitter melon, a touch of green herbals and a lasting bitter-almond savoury kick. Upfront and definitely honest." Awarded 93 points, Halliday Wine Companion, Jeni Port - Published 17 February 2026
